Try This Twist On The Traditional Pie... Add SpiritsBy Julie Fishman
This Turkey Day, we'll be giving thanks for a new twist on traditional desserts with these tipsy alternatives. In addition to the requisite apple and pumpkin pies, shake up the festivities with a satisfying strawberry daiquiri or margarita pie courtesy of Pillsbury. Just make sure the kiddies don't get a slice!
Strawberry Daiquiri Cocktail Pie
1 Pillsbury refrigerated pie crust, softened as directed on box
2 cups strawberry sorbet, softened
2 6-ounce containers of fat-free strawberry yogurt
1 cup frozen strawberries, thawed, chopped
1/4 cup rum
1/2 cup fresh strawberries
1/4 cup sugar
Heat oven to 450 F. Place piecrust in ungreased 9-inch pie plate. Press crust firmly against side and bottom; flute edges. Bake 9 to 11 minutes or until light brown. Cool completely, about 1 hour. Mix sorbet, yogurt, chopped strawberries and rum until blended. Spoon into crust. Freeze uncovered until firm, about 3 hours. Let stand at room temperature 10 minutes before cutting. Roll moistened fresh strawberries in sugar; garnish each slice of pie with sugared strawberries.
2 cups miniature pretzel twists
2 tablespoons sugar
2 tablespoons margarine or butter
1 6-ounce can frozen limeade concentrate, slightly thawed
1 quart vanilla ice cream, slightly softened
1 teaspoon grated lime peel
3 tablespoon tequila
1 tablespoon orange-flavored liqueur
Heat oven to 375 F. In food processor or blender, process pretzels until crumbs form. Add sugar; process with on/off pulses to mix. Add margarine; mix well. With machine running, add 2 tablespoons limeade concentrate, processing until well mixed. Place mixture in ungreased 9-inch pie pan. Press mixture firmly in bottom and up sides of pan. Bake at 375 F for 5 to 7 minutes or until set. Place baked shell in freezer or refrigerator for 10 to 15 minutes to cool. Meanwhile, in clean food processor bowl with metal blade or large bowl for electric mixer, combine ice cream, remaining limeade concentrate, lime peel, tequila and liqueur; process or mix until just blended. Spoon into cooled baked shell. Freeze 2 hours or until firm.
